Zucchini Corn Fritters
1-1/2 cups whole kernel corn, frozen
1/2 small red onion -- thinly sliced
1 cup parsley sprigs -- loosely packed
3 small zucchini -- 3/4" julienne strips
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
3 tablespoons soda water

In large bowl, combine corn, red onion, parsley and zucchini.
Toss to mix. Add flour. Toss gently to coat evenly with flour.
Add salt, pepper and soda water. Mix together. (Mixture should
be airy and light, but not wet; do not overmix.)
In large, heavy saucepan or deep fryer, heat 4" oil
to 375 degrees. Gather batter into loose fritters 3"
in diameter. Fry 2 at a time for 3 to 4 minutes, or until
golden brown, turning once. Remove with a slotted
spoon or tongs. Drain on paper towels. Keep warm in
low-temperature oven. Repeat frying fritters until all
batter is used.
Yield: 6 to 8 servings
