Yellow Squash and Potato Sauté
3 tbsp. vegetable oil
3 med. potatoes
3 Vidalia onions
3 med. yellow squash
Salt (to taste)
Pepper (to taste)
Thinly slice all vegetables. Heat oil in large
skillet. Add potatoes and sauté for 5 minutes.
Add onions, squash, salt and pepper. Cover and
simmer until vegetables are tender.
Serves 8.
