Yellow Squash Meringue Cake
4 c. mashed yellow squash
6 egg yolks
1/2 c. Pet milk
1 1/2 c. yellow cake mix
1 tbsp. vanilla
1 1/2 c. sugar
Mix all ingredients and put in a 13 x 9 inch pan.
Bake at 400 degrees until almost done. Finish baking
300 degrees until cake tester inserted in center of
cake comes out clean. Cool.
Topping
1 lg. instant vanilla pudding
6 egg whites
Prepare pudding according to directions and
spread over cake. Cover with whipped egg
whites (meringue). Bake at 400 degrees for 8
to 10 minutes or until meringue is light brown.
Yield: 6 to 8 servings
