This is for Barb, Laporte, who in the 9/14/10 newsletter
requested tomato quick bread recipes. I am not sure if you
wanted ripe tomato or green tomato bread recipes, but
thought I would send this to the newsletter, as many may be
looking for ways to use up some of their green tomatoes.
This first appeared in a 2007 newsletter.

Green Tomato Bread
1 cup oil
2 cups sugar
2 cups ground green tomatoes (don’t peel)
3 cups flour
1 tsp salt
1/2 tsp baking powder
1 tsp soda
3 tsp cinnamon
1/4 tsp allspice
3 eggs (beaten)
3 tsp vanilla
Mix all ingredients together. Pour in to greased bread pans.
Bake 325 degrees for one hour. Makes 5 small loaves. While
warm put each loaf in a bag with cinnamon and sugar and
shake gently.
