Fried Rice
I pull mine out of the freezer but for you that do not have
any in the freezer, I cheat on this and use a mix, "Sun Bird
Fried Rice Seasoning Mix"
2 tablespoons olive oil
3 cups cold, cooked rice (Instant)
3 green onions, sliced
2 tablespoons soy sauce
2 scrambled eggs
1 cup frozen peas and carrots
3/4 once Mix
1 cup frozen cooked cocktail shrimp (optional)
3 tablespoons teriyaki sauce (optional)
2 tablespoons olive oil (optional)
In a large skillet or wok stir fry the rice and green onion
in the olive oil for a couple of minutes. Meanwhile whisk
the eggs in a microwavable bowl and nuke them. Remove them
to chopping board and chop into chunks. Add to rice with the
mix and soy sauce and stir fry a couple of minutes. Add the
peas and shrimp if used and cook a couple more minutes. If
you use the shrimp saute them in the teriyaki and oil for a
couple of minutes in another pan. Freezes great and I make
up at least nine cups.
