For Elizabeth in SE GA. Just recently my older sister gave
me this recipe for making fig preserves. She told me that
they would not be as candied as our Mother use to make. Our
Mom would make them so sweet until they would crystallize
when put in the refrigerator. Anyway, I thought I would
share the recipe with you. I am getting some figs soon and I
plan to make this recipe too. My sister is an excellent cook
and has just recently made these herself.

Fig Preserves
1/2 to 3/4 gals. figs
4 cups sugar
1 cup water
Wash and drain figs.
In a large pot, combine water and sugar. Bring to a rolling
boil and drop in figs. Cook 45 to 60 minutes. Put in
sterilized jars, capping immediately so they will seal. Let
cool and store.
