Blueberry Crisp
3 c. blueberries or 1 (16 oz.) pkg. frozen unsweetened
blueberries
2 Tbsp. lemon juice
2/3 c. packed brown sugar
1/2 c. all-purpose flour
1/2 c. quick-cooking oats
1/3 c. margarine or butter, softened
3/4 tsp. ground cinnamon
1/4 tsp. salt
cream or ice cream
Note: If using self-rising flour, omit salt. Heat oven to
375 degrees. Arrange blueberries in ungreased
square baking dish, 8 x 8 x 2-inches. Sprinkle with lemon
juice. Mix brown sugar, flour, oats, margarine, cinnamon and
salt; sprinkle on top. Bake until topping is light brown and
blueberries are hot, about 30 minutes. Serve warm with
cream.
Makes 4 to 6 servings.
