Spiced Pumpkin Muffins
2 cups all purpose flour
2/3 cup firmly packed brown sugar
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon baking soda
1/4 teaspoon ginger
1/2 cup margarine, melted
1/2 cup cooked pumpkin
1/3 cup buttermilk
2 eggs, slightly beaten
Heat oven to 400 degrees. In a large bowl stir together all ingredients, except
margarine, pumpkin , buttermilk and eggs. In a medium bowl stir together
remaining ingredients. Add to flour mixture: stir just until moistened. Spoon
batter into greased 12 cup muffin pan. Bake for 15 to 20 minutes or until
lightly browned. Let stand for 5 minutes; remove from pan.
