Pumpkin Pound Cake
1 cup oil
4 eggs
1 cup chopped pecans
1 cup chopped dates
2 cups pumpkin
3 cups flour
3 teaspoon spices (total) pumpkin pie spice, ginger, cinnamon and allspice
1/2 teaspoon soda
3 cups sugar
2 teaspoon baking powder
Beat eggs, oil, and pumpkin. Sift dry ingredients together. Stir into pumpkin
mixture, mix well. Add pecans and dates. Bake in greased and floured pan or
Bundt pan for 30 minutes at 350 degrees. Lower heat to 275 for 30 minutes. Cool
10 minutes. Turn out on rack to cool. Two cups grated zucchini may be used,
instead of pumpkin. Cooked and mashed cantaloupe is excellent. Frost with cream
cheese icing if desired.
