Pumpkin Cookies with Lemon Icing
1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. pumpkin
2 c. flour
2 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 c. raisins
1 c. nuts
Cream shortening and eggs, beat in sugar, add eggs and pumpkin. Mix sifted
flour, baking powder, salt and spices together. Add pumpkin mixture, mix well.
Add raisins and nuts. Drop by teaspoon onto greased cookie sheet and bake for 15
minutes.
LEMON ICING
Combine 2 cups of confectioners' sugar with 1 tablespoon lemon juice and milk as
needed.
Makes 3 dozen.
