Fresh Blueberry Pie
3 pt. blueberries, washed
1 c. sugar
3 1/2 tbsp. cornstarch
1/2 c. water
1 baked 9" pie shell
Whipped topping, optional
Mash 1 pint blueberries with a potato masher. In 3 quart saucepan, mix sugar and
cornstarch. Stir in water and mashed berries. Cook over medium heat, stirring
constantly, until mixture comes to a boil. Boil 2 minutes. Remove from heat.
Cool. Fold remaining 2 pints berries into cooled mixture. Pile in baked pie
shell. Chill. Serve with whipped topping if desired.
