Cranberry Banana Meringue Pie
1 can Ocean Spray whole cranberry sauce
3 egg yolks, well beaten
1 tbsp. cornstarch
1/4 tsp. salt
2 tbsp. butter
1 tsp. vanilla or almond extract
1 baked 9" pie shell
3 ripe bananas
Bring cranberry sauce to a boil. Mix together egg yolks, cornstarch and salt. To
this add hot cranberry sauce slowly stirring constantly. Cool until thickened,
again stirring constantly. Add butter and flavoring. Cool. Put 1/2 of this
mixture into pie shell. Top with sliced bananas and add remaining 1/2 of
filling. Pile meringue on filling and bake at 325 degrees for about 15 minutes
or until browned.
Makes 1 pie.
