German Apple Pancake
Pancake:
3 large eggs
3/4 cup milk
3/4 cup flour
1/2 teaspoon salt
1 1/2 tablespoons butter
Filling:
2 tablespoons butter
1 pound tart apples
(approximately 3 c.)
1/4 cup sugar
cinnamon
nutmeg
Preheat oven to 450 degrees. Prepare pancake: Beat together egg, milk, flour
and salt until very smooth. In heavy 12-inch skillet melt butter. As soon as
butter is hot, pour in batter and put skillet in oven. Bake for 15 minutes, then
lower to 350 degrees and continue baking for another 10 minutes. Pancake is done
when it is light brown. (If pancake puffs up in large bubbles, pierce with a
fork.)
Prepare filling: Melt butter in large skillet. Peel, core and slice apples. Add
apples and sugar to skillet. Season to taste with cinnamon and nutmeg. Saut?
for 8 to 10
minutes.
Note: This can be done while pancake is baking or made in advance and then
reheated in top of double boiler just before serving.
When pancake is done, slide it onto an oval platter, pour the apple filling onto
1/2 of pancake and fold the other half over. Sprinkle with powdered sugar and
serve at once.
Serve 4 to 6.
