Peach Glazed
Meatloaf
2 lb. ground beef
1 1/2 c. soft bread crumbs
1 Tbsp. instant minced onions
1/2 tsp. sweet basil leaves
1/2 tsp. marjoram leaves
1 1/2 tsp. salt
1/4 tsp. pepper
1 egg, slightly beaten
1 1/2 c. skim milk
1 (30 oz.) can sliced peaches, drained
and syrup reserved
2 Tbsp. white vinegar
2 Tbsp. catsup
1/2 tsp. paprika
1 tsp. dry mustard
canned peach halves
parsley
Combine ground beef, bread crumbs,
onions, basil, marjoram, salt, pepper,
egg and milk and mix well. Shape in meat
loaf in shallow baking dish. Bake in
moderate 350 degrees oven 30 minutes.
Meanwhile, puree peaches and put in
saucepan with peach syrup and vinegar,
catsup, paprika and dry mustard. Bring
to a boil; reduce heat and simmer,
stirring occasionally, 15 minutes. Spoon
part of peach glaze on loaf and bake 1/2
hour longer. Slice meat loaf and serve
with remaining glaze spooned over top
and garnish of peach halves and parsley.
Makes 6 to 8 servings.
