Orange Glazed
Meatloaf
3 c. minced cooked ham (about 1 lb.)
1 lb. ground pork or turkey
1/2 c. plain dry bread crumbs
1/3 c. light cream
1/4 c. chopped parsley
3 Tbsp. finely chopped green
pepper
3 eggs
1 Tbsp. dry mustard
1/2 tsp. ground ginger
1/2 tsp. Worcestershire sauce
1/4 tsp. salt
1/4 tsp. allspice
1/8 tsp. ground cloves
1/8 tsp. pepper
Grease a 4-cup ring mold. In large bowl,
mix all meat loaf ingredients until
well-blended. Put into mold. Cover;
refrigerate until baking time.
Meanwhile, prepare the orange
sauce.
Orange Sauce:
2/3 c. water
1/2 c. orange marmalade
1/3 c. orange juice
2 1/2 tsp. dry mustard
1/4 tsp. ground ginger
1/8 tsp. ground cloves
1 Tbsp. cornstarch
1 orange, sliced
In medium saucepan, combine water,
orange marmalade, orange juice, dry
mustard, ginger and cloves. Stir in
cornstarch. Cook over medium heat,
stirring constantly, until
mixture is thickened; set aside. About 1
1/4 hours before serving time, preheat
oven to 375 degrees. Bake meat loaf 45
minutes. Invert onto baking sheet and
remove mold. Brush meat loaf with orange
sauce. Return to oven and bake 15 to 20
minutes longer,
brushing occasionally with sauce. Turn
on broiler and broil meat loaf 3 inches
from heat source until browned. In small
saucepan heat remaining sauce over low
heat. Garnish meat with orange slices
and serve with remaining sauce.
