New Mexico Meat
Loaf
1 lb. ground sausage
2 lb. ground beef
2 eggs, beaten
1 can (7 oz.) Ortega green
chili salsa
1 1/2 c. oatmeal (uncooked)
1 small can mushrooms
1 small onion, chopped
salt to taste
pepper to taste
1 can tomato sauce
In large bowl mix sausage, ground beef,
eggs, chili salsa, oatmeal, onions,
mushrooms, salt and pepper together
well. Form into a loaf pan. Pour half of
can of tomato sauce
on top of each meat loaf. Freeze one
meat loaf for another meal when you
don't have a lot of time. Cook meat loaf
at 350 degrees for 1 hour 15 minutes or
microwave for 25 minutes. Let stand for
5 minutes.
