Beef and Mushroom
Meatloaf
1 c. sliced mushrooms
1 c. chopped onion
2 Tbsp. butter
1/2 c. sour cream
2 eggs, beaten
1/2 c. milk
1 1/2 lb. ground beef
3/4 c. bread crumbs
2 tsp. salt
1 Tbsp. Worcestershire sauce
1 c. sliced mushrooms
2 Tbsp. butter
Saute 1 cup mushrooms and 1 cup onions
in 2 tablespoons butter. Remove from
heat and stir in sour cream; set aside.
Combine all remaining meat loaf
ingredients except 1 cup mushrooms and 2
tablespoons butter. Put half of the
mixture into a 9 x 5-inch loaf pan. Make
a shallow trough down the middle of the
meat. Spoon reserved sour cream mixture
into the trough. Shape the rest of the
meat over the filling (make sure
all the filling is covered). Seal the
meat loaf around the edges. Bake in
preheated oven for 1 hour. Let stand 15
minutes before slicing. S
Saute remaining 1 cup mushrooms in 2
tablespoons butter. Place on top of meat
loaf for garnish.
Serve with sour cream.
