Grilled Pineapple With Maple Butter
1 pineapple
3 tablespoons butter
1/4 cup maple syrup
1 tablespoon toasted chopped hazel nuts
Heat grill. Quarter pineapple lengthwise, leaving fronds on. Melt butter and
stir in maple syrup. Grill pineapple quarters on one cut side until golden, abut
5 minutes. Turn the quarters and brush cooked side with maple syrup-butter
mixture. Cook second side until golden, about 5 minutes. Brush it with maple
butter. If you like, cut through each quarter to loosen flesh from skin and then
cut crosswise into bite size pieces. Pour remaining maple butter over pineapple
and top with chopped hazel nuts.
