Banana Caramel Ice Cream
2 tbsp. butter
3/4 c. light brown sugar, packed
2 1/4 c. light cream
1 c. mashed bananas (3 med.)
1/4 c. chopped walnuts
1 tbsp. vanilla
Stir butter and brown sugar in medium saucepan over low heat until
sugar dissolves. Add cream. Stir until smooth. Remove from heat;
pour into bowl; add bananas, walnuts and vanilla. Mix well and chill
1 hour. Pour into 1 quart freezer and freeze. Serve with sliced
bananas and caramel sauce.
