Apple Banana Ice Cream
8 oz. apple pieces (two apple pieces)
6 oz. banana pieces (two bananas)
2-2/3 tbsp. powdered sugar
1/4 c. heavy cream
1/2 tbsp. lemon juice
1/4 tsp. vanilla extract
Peel fruit, cut into 1 inch chunks and freeze solid, at least five
hours. Using food processor, pulse-chop fruit until coarsely
chopped, 6 to 8 times. Combine for 40 to 60 seconds, scraping down
work bowl as necessary, until fruit is a fine powdered ice. Scrape
down bowl and add powdered sugar. With machine
running, slowly pour in remaining ingredients through opening. Serve
immediately or keep in freezer and reprocess for 20 seconds before
serving. For a healthier serving, substitute yogurt for the heavy
cream. preparation time: about 6 minutes. Suggestion: keep a plastic
storage bag full of frozen fruit for quick dessert or snack.
Substitute other frozen fruits for a change of taste. e.g. use 1
package (16 oz.) frozen sliced unsweetened peaches. Adjust sugar to
taste.
