Rhubarb Coffee Cake
1-1/2 c. flour
1 c. sugar
2 eggs
1 c. sour cream
1 tsp. baking soda
1/2 tsp. salt
2 c. rhubarb (cut in 1/4 inch thick pieces)
Toppings
1/2 c. chopped walnuts
1/2 c. brown sugar
1 tsp. cinnamon
Preheat oven to 350 degrees. Grease 9x13 pan. In a large bowl mix
the first seven ingredients and blend well with a wooden spoon. Pour
the mixture into the 9x13 pan. In a small bowl combine the three
ingredients listed under topping. Sprinkle the topping mixture
evenly on top of the rhubarb mixture. Bake in 350 degree oven for 35
to 40 minutes. Serve warm with whipped cream.
