Microwave Rhubarb Pudding
4 c. sliced rhubarb
6 slices bread, cubed
1 1/2 c. sugar
1/2 tsp. cinnamon
1/4 c. margarine or butter
Combine rhubarb, bread, sugar and cinnamon in large bowl and mix
well. Put into 1 1/2 quart casserole. Microwave butter in dish 1/2 -
1 minute until melted. Drizzle over rhubarb. Sprinkle with a little
more cinnamon. Microwave uncovered 10 or 11 minutes on high until
tender. Serve with half and half.
Serves 6.
