Zucchini Crisp
8 peeled zucchini without seeds, sliced like apples
Cook together until tender: 2/3 c. lemon juice 1 tsp. cinnamon
CRUST:
4 c. flour
2 c. sugar
1/2 tsp. salt
3 sticks margarine
Mix together until crumbly. Pat 1/2 crust mix into 10x13 inch pan (about 4
cups). Bake 10 minutes in 350 degree oven. Add 1/2 of remaining crust mix in hot
cooked zucchini mix. Add 1 tsp. cinnamon to remaining crust mix. Spread on top
of zucchini filling. Bake at 375 degrees for 35 minutes. Cool. Cut into squares
and serve.
