Apple Cobbler Cookies
3 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1/2 c. sugar, granulated
1/2 c. firmly packed brown sugar
1 c. soft butter or margarine
1 c. chopped nuts
2 lg. eggs
2 tsp. vanilla
1/2 c. apple butter
1/4 c. apple juice
1 c. chopped peeled apples
1 c. raisins
Crumb Coating
1-1/4 c. brown sugar
1-1/2 c. quick oats (not instant)
1-1/4 tsp. cinnamon
9 tbsp. soft butter or margarine
Heat oven to 300 degrees. Mix thoroughly flour, baking powder and cinnamon. In
another bowl, mix sugars with mixer. Add butter, eggs and vanilla, beat until
well blended. Beat in apple butter and juice. Add flour mixture, chopped apples,
raisins and nuts. Mix on low speed just until mixed. Refrigerate 30 minutes or
until firm enough to shape. Crumb coating - mix sugar, oats, cinnamon. Add
melted butter. Stir until moistened. Make balls and roll in coating - place on
ungreased cookie sheet. Bake 24-26 minutes.
