Wheat Germ Whole-Wheat Buttermilk Pancakes
2 eggs slightly
1/4 C canola oil
2 C
buttermilk*
2 t baking soda
1/2 C wheat germ
1/2 t salt
1 1/2 C whole wheat pastry flour
In a medium bowl, mix eggs with ouil & buttermilk. Stir in baking soda, wheat
germ, salt & flour, mix until blended.
Heat a lightly oiled griddle or frying pan over medium high heat. pour or scoop
the batter onto the griddle using approximately 1/4 C for each pancake, brown on
both sides turning only once.

Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
