Melody's Buttermilk Cake
1 cup sugar
2 cup flour
2 teaspoon baking powder
1 cup oil
1 cup buttermilk
2 eggs
1 teaspoon vanilla
Mix together & bake in 9 x 13" pan at 350* for 30 min or until tests done.
Glaze: 1 c sugar, 1/2 c buttermilk,1/2 c butter. Mix together; bring to boil &
boil a few min. Pour over warm cake. Top with coconut & chopped pecans as
desired. Cool completely and serve. This recipe came from my aunt.
I often use the powdered buttermilk that has been reconstituted as per
directions as I seldom have the liquid buttermilk on hand.

Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
