Buttermilk Gingerbread
1 cup butter or margarine
1 cup sugar
2 eggs
1 cup molasses
3 1/3 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 1/2 teaspoons ginger
1 teaspoon allspice
1 1/4 cups
buttermilk*
Cream butter and sugar until smooth. Add eggs, molasses, salt, soda and spices.
Mix vigorously until well blended. Add flour and buttermilk alternately. Line
bottom of a 9 x 13 inch cake pan with waxed paper and lightly grease sides. Pour
batter into pan and bake at 350 degrees for 45-50 minutes or until inserted
toothpick comes out clean.
*
Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
