Buttermilk Donuts
2 eggs
1 c. sugar
2 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
1 tsp. mace
2 tbsp. grated lemon peel
2 tbsp. soft shortening
3/4 c. thick
buttermilk*
3 1/2 c. sifted flour
Beat eggs well. Beat in sugar and shortening. Stir in
buttermilk*, sift dry ingredients together and add to liquid mix.
Beat until smooth. Turn dough (1/2 at a time) on well floured board until
lightly floured. Roll out gently to about 1/3 inch thick. Fry in hot deep fat
until brown; roll in sugar, powdered sugar or cinnamon sugar.
*
Powdered buttermilk does not have to be mixed
separately. I just add the powder with my flour and the water with the my other
liquids and let it mix in the batter.
