Canned Beets

Brine:
2 c. sugar
1 c. vinegar
salt and pepper to taste

Boil beets until tender. Skin and slice. Bring brineto boiling and boil 3 to 5 minutes. Add sliced beets. Heat beets 3 to 5 minutes in brine. After adding beets just let come
to a boil; jar and seal. Double 4 times for a 7 quart canner of beets.
