Apricot Rice Salad
1/2 cup rice
3 cups water
1 can mandarin oranges
1 cup whipped cream
1 small can crushed pineapple
1/2 cup sugar
1 (3 ounce) pkg. apricot Jell-O
Cook rice in water about 25 minutes. Dissolve Jell-O in 1/2 cup of the rice
water. Combine everything except whipped cream, when partially set, fold in
whipped cream.
