Apricot Preserves Spice Cake
3 cups flour
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
2 cups sugar
3/4 cup butter
4 eggs
1 cup buttermilk
2/3 cup cherry preserves
2/3 cup pineapple preserves
2/3 cup apricot preserves
1 cup pecans, chopped
1 1/2 teaspoon vanilla
Cream together butter and sugar. Add eggs, one at a time. Beat well. Sift
together flour, baking soda, allspice, cinnamon, and nutmeg. To creamed mixture;
add dry ingredients alternating with buttermilk. Fold in cherry preserves,
pineapple preserves, apricot preserves, pecans, and vanilla. Pour into well
greased, floured tube pan. Bake at 300? for 1 1/2 hours.
