Apple Wheat Germ Muffins
2/3 cup milk
2 teaspoons vinegar
1 cup shreds of wheat bran cereal
2 eggs, beaten
2 tablespoons vegetable oil
1/4 cup sugar
1/2 cup all-purpose flour
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 cup peeled, finely chopped apple
1 tablespoon wheat germ, toasted
Combine milk and vinegar in a mixing bowl; let stand 1 minute. Add cereal; let
stand 5 minutes. Beat in egg and oil; stir in sugar. Combine flour, cinnamon and
soda; add to cereal mixture, stir just until moistened. Fold in apple. For
Microwave: Spoon batter into paper-lined microwave muffin cups, filling 2/3
full. Sprinkle with 1/4 teaspoon wheat germ. Microwave high, 2-3 minutes,
rotating once. Let muffins cool in pan 1 minute; serve immediately. Repeat
procedure with remaining batter.
