CCitrus Sandwich Grouper

2- 6 to 8 oz. filets of grouper or other firm white fish
1 EACH lemon, lime, & orange
2 T. olive oil
4 sprigs fresh thyme leaves
Salt
1 T. whole peppercorns, crushed
Also, kitchen string & a grill basket

Zest about half of each fruit, then cut one slice from each. Place the slice of each fruit on 1 piece of the fish, then add the thyme leaves & sprinkle sparingly with salt & generously with the pepper, & then adding all the zest. Lay the second filet on top. Tie firmly in 4 places. Squeeze juice from all 3 fruits into a sealable bag, adding the olive oil & a bit more salt & pepper. Then gently add the fish 'sandwich'. Chill at least 1 hour. To
cook, drain fish reserving the marinade. In a grill basket, cook over Medium High heat for 20 to 25 minutes, basting often with reserved marinade, & turning at least once. Cut strings & serve hot. This can also be cooked in a broiler about 6" from heat & set at 375º. Serves 2. To multiply, use 2 more filets for each 2 servings, rather than choosing larger filets.

Use sides that don't conflict with this fantastic citrus flavor; sweet potatoes grilled to melting consistency and dressed only with seasoned pepper; plain butter or lima beans; plain soft dinner rolls; plain whipped potatoes, this kind of thing.
