Scotch Spice Cake
Pour 1/3 cup boiling water over 1/2 cup quick-cooking rolled
oats. Stir in 3/4 cup undiluted evaporated milk; cool.
1-1/4 cups flour
1/2 tsp. salt
1/2 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 cup raisins
1/2 cup nuts, chopped
1 cup brown sugar, packed
1/4 cup granulated sugar
1/2 cup shortening
2 eggs
Put the first five ingredients into a large mixing bowl.
Stir in raisins and nuts. In a separate bowl cream sugars
and shortening together. Blend in eggs; one at a time,
beating well after each. Stir in the cooled oatmeal. Add the
dry ingredients gradually. Mix thoroughly. Turn batter into
a 9 inch square pan, that has been well greased and lightly
floured on the bottom. Bake at 350º for about 40 to 45
minutes, or till test done with a toothpick. Cool and frost
with Coffee Frosting, or sprinkle with powdered sugar.
Coffee Frosting
Cream together 2 tbsp. butter, 2 cups powdered sugar, 1 to 2
tsp. instant coffee granules and 2 to 3 tbsp. milk until
spreading consistency
