Had this dessert at a potluck and it was wonderful,
with rhubarb in season it would be good to make.
Rhubarb Dream Bars
Crust:
2 cups flour
¾ cup powdered sugar
1 cup (2 sticks) butter
Combine flour and sugar.
Cut in butter until crumbs form.
Press into 15x10” jelly roll pan.
Bake in 350° oven for 15 minutes.
While crust is baking, prepare filling.
(Note: I used my food processor to cut in the butter...5
quick pulses and the job was done.)
Filling:
4 eggs
2 cups sugar
1/2 cup flour
1/2 teaspoon salt
4 cups rhubarb, diced (another quick job in the food
processor)
Blend eggs, sugar, flour and salt until smooth and fold in
rhubarb.
Spread over hot crust and bake in 350° oven 35 to 40 minutes
until filling is lightly browned.
Cut bars when cool.
