The purpose of this recipe newsletter is
to post requests and replies from our members and to post
all their great tried and tested (TNT) recipes.
Dianne in Wisconsin asked for the other
small cake recipes I mentioned in a earlier newsletter, so
will divide them up into two parts, in case
Nancy doesn't have enough room for all of them at one time.
These are all TNT recipes that we've been enjoying for many
years, and hope you
will too.
Apricot
Gooey Cake
Cook 18 large dried apricot halves in water to cover, until
tender.
Drain and mash; set aside.
1-2/3 cups flour
1/2 tsp. baking powder
1/2 tsp. soda
1/4 tsp. salt
1 cup sugar
1/3 cup shortening
1 egg
1/2 tsp. vanilla
1/4 tsp. lemon extract
3/4 cup water
Cream together the sugar and shortening. Add egg and
extracts; mix in well. Combine dry ingredients and add
alternately to the creamed mixed with the water, blending
well after each addition. Blend in 2 tbsp. of mashed
apricots thoroughly. Turn batter into 9 inch square pan,
that has been well greased and floured on the bottom. Bake
at 350º for 35 minutes, or until toothpick inserted comes
out clean. Cool; frost with Apricot Coconut Topping.
Apricot Coconut Topping:
Combine 2 tbsp. butter, 1/4 cup packed brown sugar and the
remaining mashed apricots in saucepan. Cook, over medium
heat, 3 minutes, stirring constantly. Remove from heat. Add
1/2 cup flaked coconut. Spread over cake while topping is
warm.

Licorice
Lemon Cake
1-3/4 cups flour
2-1/2 tsp. baking powder
1/4 tsp. salt
1 cup sugar
3/4 cup milk
1/2 cup soft butter
2 eggs
1 tbsp. anise seed
1 tbsp. grated lemon rind
1 tsp. vanilla
1 tsp. lemon extract
Put first four ingredients in bowl for electric mixer. Add
remaining other ingredients. Beat for 2 minutes on low
speed. Put batter into well
greased and lightly floured 9 inch square pan on the bottom.
Bake 375º for 30 minutes, or until toothpick comes out clean
when inserted in the
center. Cook and frost with Lemon Butter Frosting.
Lemon Butter Frosting
Cream together well:
1/4 cup butter
2 tbsp. milk
1 tsp. lemon rind
1 tbsp. lemon juice
1/4 tsp. vanilla
1/8 tsp. salt
2 cups powdered sugar
Note: Can thin with a little milk, if necessary.

Busy Day
Chocolate Cake
1-1/3 cup flour
1 cup sugar
1 tsp. soda
1/4 tsp. salt
14 cup shortening
1 cup buttermilk
1 egg
1 tsp. vanilla
2 squares melted unsweetened chocolate
Put first four ingredients in the bowl of electric mixer.
Add remaining ingredients. Beat for 3 minutes on low speed.
Put batter into well greased 8 or 9 inch baking pan, greased
and floured on bottom only.
Bake at 350º for 35 to 40 minutes, until toothpick inserted
comes out clean. Can frost, or serve warm with whipped
cream. Delicious moist chocolate cake, when in a hurry.

For Jesica in Georgia--- I should have been more specific. 2
cans 26oz EACH. The Houston's Bar B Q Beans recipe, as you
can imagine, is a scaled down version of what I observed in
their kitchen as they were cooking what looked like 10
gallons. Anyway, the recipe in Nancy's letter Is what I
wrote down when I was cooking them for a crowd. Most of the
time I halve the recipe. For you. I would use two 15oz cans
for 6 people and you will have plenty with leftovers.
Modified Houston's Beans
for 2, 15oz CANS
3 slices bacon chopped
1 medium onion, chopped
3 tablespoons brown sugar
2 teaspoons prepared mustard
3/4 teaspoon cinnamon
3 tablespoons ketchup
2 cans Ranch Style Beans 15oz each
Saute onion in bacon until limp and mix with rest. Cook in
dish in 250 F oven for an hour.

I have free
AVG antivirus program on my desktop. Several days ago I
did a search for a particular power cord for a PDA I have. I
clicked on a link that was listed and hit a site that was
setup to infect a computer with a virus. The site was one
that said I had been infected with a virus and the only way
I could remove it to purchase and run their software.
The virus was one that redirected the browser to another
site. The virus program found that there was a virus but did
not remove it. After may trial and errors, one of our family
member's husband sent me a message to call him and he could
help me. I did and now the virus is gone. Thank you Jon for
your help.

Hi all,
Here is a recipe that a friend gave me and I tried it last
Sunday morning for breakfast. It is baked in an electric
skillet which would make it wonderful to make when it gets
hot or when cooking in an RV. It was easy, tasty and keeps
quite well.
Electric
Skillet Sour Cream Coffee Cake
1 1/2 c flour
1 c sugar
2 t baking powder
1/2 t baking soda
1/4 t salt
1 t nutmeg or cinnamon or combination
1 c sour cream
2 eggs
1/2 c chopped nuts (optional)
In a mixing bowl, stir the above ingredients until creamy.
Heat an electric skillet to 280 degrees. Spray with Pam.
When the light goes out, pour batter in pan, cover (close
vent if you have one) Bake 25 minutes.
Topping:
1/2 c brown sugar
1 t cinnamon
2 T melted butter
2 T flour
1 t nutmeg
1/2 c chopped nuts
Mix, sprinkle over top of cake after it has baked. Turn off
the electric skillet. Cover and let stand 10 minutes.
My electric skillet is probably 10 inches square. You might
have a thinner coffee cake and have to adjust time if your
pan is larger.
Has anyone else found recipes for baking cakes, biscuits,
etc. in their electric skillet? I would be interested to
give others a try. I prefer using an electric skillet to the
stove/oven in my RV. Propane is way too expensive and most
sites have electric hookups.

Chip Muffins
Mix:
2 cups Splenda
1 cup vegetable oil
1/2 cup unsweetened applesauce
4 eggs
Add:
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
Add:
15 ounce can pumpkin
3 cups flour
Fold in:
6 oz regular size or mini chocolate chips (optional)
Spoon into muffin pans sprayed with Pam and bake 375 degrees
for 25 minutes.

Bran Muffins
Mix and let set 5 minutes:
3 cups Raisin Bran
2 cups hot water
Mix:

I put this dish together with what I had left in the
cupboard and fridge. Turned out very well! In fact this is
on the menu this week! T & T
Quick Ham and Beans
for Two
2 # 2 cans cannellini beans w/ liquid *
1 large precooked smoked pork chop
1/2 medium onion, diced
pepper to taste
baked cornbread on the side - I use the Jiffy mix
Cube the smoked pork chop in 1/2" pieces.
Combine with undrained beans and diced onion. Add pepper to
taste. Heat in small to medium saucepan at low to medium
heat till completely heated through, about 30 minutes.
Serves 2 Serve with cornbread. *There is no need to add salt
because the smoked pork chop already contains enough salt
for flavor.
* These are white kidney beans. If you can't find them in
your stores, you could use little northerns or navy beans.

Elegant Pork Chops
(For Two)
2 pork loin chops (1 inch thick)
1 tablespoon cooking oil
1 can (10-3/4 ounces) condensed cream of mushroom soup,
undiluted
3/4 cup milk
3/4 cup uncooked instant rice
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
Dash pepper
In a skillet over medium heat, brown the pork chops in oil;
set aside. In an ungreased 8-in. square baking dish, combine
soup, milk, rice and seasonings; mix well. Top with pork
chops. Cover and bake at 350 degrees for 45 minutes or until
meat is tender. Uncover and bake 5 minutes longer. Let stand
for 10 minutes before serving. Yield: 2 servings

Hamburger Soup
for Two
1/2 pound ground beef
3 cups water
1 cup tomato juice
1/4 cup shredded carrots
1 cup diced potatoes
1/4 cup chopped celery
2 tablespoons uncooked rice
1 medium onion, chopped
1 teaspoon salt
Brown beef in skillet, chopping into bite size pieces as it
browns. Drain and add to 3 cups boiling water in sauce pan.
Add remaining ingredients and simmer for approximately 30
minutes or until the vegetables are tender.

chicken stock/broth recipe.
Will save the carcasses of the next couple of rotisseried
chickens I get (COSTCO is the absolute best), and make some
broth/stock.

Here are two more tasty small cake recipes for Dianne in
Wisconsin.
Scotch Spice
Cake
Pour 1/3 cup boiling water over 1/2 cup quick-cooking rolled
oats. Stir
in 3/4 cup undiluted evaporated milk; cool.
1-1/4 cups flour
1/2 tsp. salt
1/2 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 cup raisins
1/2 cup nuts, chopped
1 cup brown sugar, packed
1/4 cup granulated sugar
1/2 cup shortening
2 eggs
Put the first five ingredients into a large mixing bowl.
Stir in raisins and nuts. In a separate bowl cream sugars
and shortening together. Blend in eggs; one at a time,
beating well after each. Stir in the cooled oatmeal. Add the
dry ingredients gradually. Mix thoroughly. Turn batter into
a 9 inch square pan, that has been well greased and lightly
floured on the bottom. Bake at 350º for about 40 to 45
minutes, or till test done with a toothpick. Cool and frost
with Coffee Frosting, or sprinkle with powdered sugar.
Coffee Frosting
Cream together 2 tbsp. butter, 2 cups powdered sugar, 1 to 2
tsp. instant coffee granules and 2 to 3 tbsp. milk until
spreading consistency

Square Dance
Nut Cake
1-2/3 cups flour
1 cup sugar
2 tsp. baking powder
1/4 tsp. salt
1/4 cup soft butter
1/4 cup shortening
3/4 cup milk
3 unbeaten egg whites
1/2 tsp. vanilla
1/4 tsp. lemon extract
1/2 cup walnuts, chopped
Put first four ingredients into bowl of an electric mixer.
Add butter, shortening and milk. Beat on low speed for 1-1/2
minutes. Add egg whites and extracts. Beat another 1-1/2
minutes on low. Stir in chopped nuts.
Turn batter into a 8 inch square pan, well greased and
lightly floured on the bottom. Bake at 350º for about 40
minutes, or till toothpick comes out clean, when inserted
near the middle. Cool thoroughly. Cut cake into four
squares. Frost two cake squares with the white frosting and
two with chocolate frosting. Arrange checkerboard fashion,
and decorate with additional chopped nuts on the sides of
cake, putting a few on top in the middle. A wonderful tasty
quick-mix cake.
Checkerboard Frosting
Blend together 2-1/2 cups powdered sugar, 2 tbsp. melted
butter and 1 tbsp. warm milk. Stir in *1 egg yolk and 1/2
tsp. vanilla. Beat until spreading consistency, adding 1/4
to 1/2 cup additional powdered sugar, if necessary. Add 1
square melted unsweetened chocolate to one-third of the
frosting; gradually stir in 1 to 3 tbsp. milk until
spreading consistency.
*Note: I haven't made this cake in a very long time. When I
use to make it, there wasn't a warning about raw eggs, so
you may want to use a egg substitute, or just omit?
