In some of the recent newsletters I have noticed recipes for Oatmeal Cakes and muffins using oatmeal, I would like to share my favorite Oatmeal Muffin recipe, and also a recipe for a delicious Oatmeal Pie.

Oatmeal Pie

Unbaked 9 inch pie shell
1/4 cup butter
1/2 cup sugar
1/2 tsp. cinnamon
1/2 tsp. cloves
1/4 tsp. salt
1 cup dark corn syrup
3 eggs
1 cup quick-cooking rolled oats

Cream together butter and sugar; add spices and salt. Stir in corn syrup. Add eggs, one at a time, stirring after each addition until blended. Stir in oats.

Pour into pie shell and bake at 350º for 50 to 60 minutes, or until knife inserted in the center comes out clean. Cool before serving. We
like it served with whipped cream on top.

Note: During baking, the oatmeal forms a chewy, "nutty" crust on top.
This pie is rich and delicately spiced. Enjoy!
