Hi Nancy, kitties and Nancylanders: I am in the spring
cleaning mode and decided to clean out my large collection
of
cookbooks and get rid of some. I came across some very old
books of my Mom's, and her handwritten recipes that
go back to 1935. I thought someone might be interested in
these three unusual Jelly and Jam recipes. These are not
TNT as far as I know, but it might be worth a try .
Mountain Ash Jelly
2 pounds berries of mountain ash tree
2 pounds sugar
2 cups water
Berries should be fully ripe. Pick off stems, rinse and
drain.
Pour boiling water over them and darin again.
Bring the two cups of water and the berries to a boil and
cook until soft.
Pour into sieve and work with a wooden spoon. Discard
residue left in sieve.
Add sugar to juice. Boil together until syrup sheets from a
spoon. (220-222 degrees on thermometer (candy)
Pour into hot sterilized jars and seal.
Word of caution: Do not use any berries from a tree that has
been sprayed with insecticide.
