Here is a very tasty but healthy cupcake for that chocolate
lover.
Double Chocolate Cupcakes
2 tbsp. oil or softened margarine
3/4 cup sugar
1 egg
1 egg white
1/2 cup plus 2 tbsp. buttermilk
1/3 cup water
1 tbsp. white vinegar
1 tsp. vanilla
1 1/2 cups all-purpose flour
1/4 cup baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1/3 cup miniature semi-sweet chocolate chips
In a mixing bowl, cream oil and sugar. Add egg and egg
white, one a time, beating well after each addition. Beat on
high speed until light and fluffy. Stir in buttermilk,
water, vinegar and vanilla. Combine the flour, cocoa, baking
soda and salt. Add to batter just until moistened. Stir in
chocolate chips. Fill paper-lined muffin cups ¾ full. Bake
at 375 degrees for 15 – 18 minutes or until a toothpick
comes out clean.
One cupcake equals 139 calories, 2 g fat (1g saturated fat)
