Yazoo City Catfish
1/4 c. butter at room temperature
2 catfish filets, 1/2" thick
1 heaping tsp. minced garlic
Lemon pepper seasoning
Mix butter & garlic well. Coat both sides of fish with it
heavily & sprinkle generously with lemon pepper. Cook
directly over Medium High heat about 6 minutes, turning so
it doesn't burn; spread the rest of butter on top of
filets & cook 5 minutes more, turn again, then cook till
firm & completely opaque. Serve immediately. Serves 2,
can be multiplied.
