Salt-Roasted Potatoes
12 sm New potatoes
1/4 c Olive oil
1/2 ts Salt
1/4 ts Pepper
Cook new potatoes in boiling water until
just tender, 15 to 20 minutes. Do not
overcook. Rub with olive oil and roll in
salt and pepper. Place on grill over
medium coals and grill until skin is
crisp, about 10 to 12 minutes. Yield 6
servings.
If you don't want to grill, roast in 400
degree oven for 10 to 12 minutes.
