To let you know that Buffalo has surfaced with Lake Erie
clear of ice and Old Mister Sun bringing temps touching the
60's. Another glorious spring. Hope you are all enjoying the
same. This easy tart is a great way to welcome the new
season and the holiday. It is a crowd pleaser. Enjoy!
Peach Tart
Mix:
1 cup peach or apricot preserves
2 Tbs cornstarch
3-4 ripe/firm peaches (1-1 1/4#), peeled/sliced
Pour into unbaked pie crust. Bake 425 oven 20 minutes then
350 oven 40 minutes. Let cool and top /whipped cream. I bake
my tart in a fluted pan w/removeable bottom for
presentation.
