Corn Bread Taco Bake
1 1/2 pounds ground beef
1 package taco seasoning mix
1/2 cup water
1 can (12 ounces) whole kernel corn,
drained
1 can (8 ounces) tomato sauce
1 package (8 ½ ounces) corn muffin mix,
plus ingredients to prepare mix
1 can French fried onions
1/2 cup shredded cheddar cheese
Preheat oven to 400. In large skillet,
brown ground beef; drain. Stir in taco
seasoning, water, corn, green pepper and
tomato sauce; pour mixture into 2-quart
casserole. In small bowl, prepare corn
muffin mix according to package
directions; stir in 1/2 can onions.
Spoon corn muffin batter around edge of
beef mixture. Bake, uncovered, at 400
for 20 minutes or until corn bread is
done. Top corn bread with cheese and
remaining onions; bake, uncovered, 1 to
3 minutes or until onions are golden
brown.
