Biscotti Regina (Sesame-Seed Cookies)
1cup shortening
1 cup sugar
8 eggs
1 tbsp. vanilla
4 cups all-purpose flour
3 tsp. baking powder
1 tsp. salt
1/2 lb. sesame seeds
Cream the shortening and sugar. Add eggs
one at a time. Add vanilla and blend.
Mix together dry ingredients and combine
with the liquid mixture. Stir with
wooden spoon until thoroughly blended.
Work dough into thin rolls about one
foot long, as big around as your finger.
Roll dough in sesame seeds. Pat the top
of the roll to make flat. Cut sections
about two inches long. Place on
ungreased cookie sheet. Bake at 350˚ for
about 15-20 minutes until brown.
