Barm Brack – Irish Fruit Cake

2 cups brewed black tea – cold
1 cup brown sugar
185 gms (6 oz) sultanas (golden raisins)
60 gms (2 oz) candied peel
155 gms (5 oz) SR flour
1 egg, beaten

Place tea, sugar, sultanas and peel in a bowl and leave to soak overnight. Preheat oven to 180 C/350 F.

Grease and flour a 20 cm/8 in round cake pan. Sift flour into the tea mixture, add egg and beat well. Pour into cake pan and bake for 1 hour and 45 minutes, or until skewer inserted into centre of cake comes out clean.

Leave in tin for 5 minutes and then turn out onto a wire rack to cool.

This is delicious served thickly sliced with butter.

The Irish house wife never wasted any thing, this was how you used the left over tea in the pot, you emptied it in a jug till you got your 2 cups from the day's cuppa's.
