Tapioca (Low Fat/Carb/Calories)
In a saucepan whisk together:
3 cups skim milk (I use 1%)
1/4 cup sugar
3 tbs tapioca
1 egg, beaten
1/2 tsp vanilla extract
Allow to sit for 5 minutes.
Add a dash of nutmeg.
Bring the pudding mixture to a boil, stirring constantly
with a whisk.
Once the pudding has reached a boil, remove from the heat,
and allow to cool for 15-20 minutes.
Pudding may then be eaten warm, or refrigerate immediately
to cool with top covered directly by wax paper or plastic
wrap.
