Hi everyone. Here is another TNT healthy
recipe. I use Dreamfield's pasta in all
my pasta dishes.
Spinach Lasagna Roll-Ups
8 uncooked Lasagna noodles
1 (15 oz.) container of low fat ricotta
cheese
1 square box frozen spinach, thawed,
squeezed dry in a paper towel. ( I use
chopped spinach)
1/4 cup egg substitute.
1/2 cup finely grated carrot
2 tblsp. grated Parmesan cheese
1 tsp. dried oregano
1/4 tsp. granulated garlic
1 1/2 cups spaghetti sauce ( I use a low
fat store bought sauce)
2 oz. ( 1/2 cup) shredded mozzarella
cheese.
Cook lasagna noodles as directed on
package, drain, keep warm. In medium
bowl combine all remaining ingredients
except spaghetti sauce and mozzarella
cheese. Mix well. Put about 1/4 cup of
the mixture down the center of the
lasagna noodles, roll up jelly roll
fashion from short side. Should get 8
nice roll ups. I put two each in
individual small casseroles, but all can
be put in a large casserole dish in
single layer. Spoon sauce over rolls and
sprinkle with mozzarella cheese. Bake at
400 degrees for 25 to 30 minutes.
4 servings of two roll ups each.

recipe magazine dated 1995.
