Here is a very good and easy
recipe--someone wrote that she did not
like to measure a lot of ingredients.
This has only 3.
Spicy Chicken
4 each chicken drumsticks and thighs
(about 2 lbs.)
2 cans (14oz.each) diced tomatoes with
jalapenos. (I use Del Monte tomatoes
with mild green chiles because I do not
like really hot chiles.)
1/2 c. creamy peanut butter.
Pull the skin off of the chicken pieces
by grabbing the skin with a paper towel.
Stir the tomatoes and peanut better well
in your crockpot, then add the chicken
and mix well. Cook on high for 4 to 5
hours or on low for 7 to 9 hours. Serve
with rice and a green vegetable. If you
like, you can garnish the chicken
servings with chopped fresh cilantro.
