I seem to have a lot of extra self rising flour, and wonder if I could use that in place of all purpose flour for baking cookies? Wishing everyone a very happy and healthy New Year.

My computer is acting up. During our ice and snow storms my computer had several power surges when the electricity quickly went off and then on. Because there is little or no computer repair services available during the holidays, it will be taken to the computer doctor on Monday. I am hoping it makes it until then. It is probable it won't. If it doesn't make it to Monday there may not be a newsletter.

Boots in VA. Was looking for a replacement for her CLUB ALUMINUM cookware. I had to get my replacement from E BAY. I have had very good luck with my purchases. Not sure what would be a good replacement for the Club Aluminum.

Nancy I believe the buttermilk gelatin salad I made came from you, I seen a request in the Dec 30th recipe newsletter Rose from Wi. would like the recipe. It was made with apricot Jell-O and crushed pineapple heated on stove and I believe it was your recipe so maybe you want to post it for Rose.

Black-Eyed Peas: A New Year's Day Tradition
The History of New Years Resolutions

Hi Nancy: Happy New Year to you, your wonderful kitties and to our great Nancylanders. My son from Florida called today to request his Dad's favorite coffee cake recipe from years ago. I decided to share this really great recipe with you folks as well. I do have to stress though, that you must use a bundt or Springform pan that has the larger center ring. For some reason, you cannot use anything else, or it just won't come out at all. The coffee cake is worth the purchase of the pan, and you can always use it for other recipes as well. I hope you enjoy it. It is the best coffee cake recipe we have ever had and was given to me over forty years ago by a friend I would love to hear if anyone likes it as much as we do.

Dad's Favorite Coffee Cake

Use a bundt pan or springform pan with a very large center opening or it just won't come out right .

Mix together & beat in large bowl:
1 cup sugar
1/4 cup butter

add & mix in:
2 beaten eggs

Add:
1 cup milk
1 level tsp. vanilla

mix together. & add:
1 tsp. baking powder-scant -just level it
1 tsp. baking soda-scant
1/4 tsp. salt
2 cups flour

Mix the above well.

In a separate bowl, combine:
1 tsp. cinnamon
1/4 cup chopped walnuts or pecans, your preference
1/4 cup brown sugar

Pour half of the batter in a large ring bundt pan or springform pan with large center ring.
Take 1/2 of the cinnamon/sugar/nut mix and sprinkle on the top .
Pour in rest of the batter.
Sprinkle rest of sugar mixture over the top.

Bake at 350 degrees for 50 to 60 minutes or until a toothpick comes out clean.

Drizzle your own glaze over the cooled coffee cake or use this one:
1/4 cup or 4 TBLs. butter melted in microwave
sift 2 cups powdered sugar into a medium bowl

Add the melted butter
add 2 TBls. milk
You can add 1/4 tsp. of almond extract or 1/2 tsp. of vanilla for flavor.
Beat until smooth and creamy adding a little more milk if necessary

Happy New Year to all Nancylanders, especially Nancy and the four legged friends even the one that stays outside.

Debby W requested a tried & true recipe for Macaroni and cheese. I have been making this one for years and my mother before me. My grandchildren used to eat Kraft dinner until they tried this at my house. Now they don't want anything else.

Mom's Macaroni & Cheese

Into 6 cups boiling salted water, put 2 cups macaroni. Boil until tender. Drain.
Combine with cheese sauce (recipe follows)and bake at 375ºF for 30-35 minutes, uncovered.

Cheese Sauce:-
Melt 2 tbsp butter or margarine, blend in 2 tbsp flour, pinch dry mustard, a little finely chopped onion OR onion flakes, pinch salt and a little black pepper, then stir in 1 to 1-1/2 cups grated cheddar cheese (I use old cheddar), and 2 cups milk. (I always add the milk before the cheese)

Cook for a minute or two to cook off raw flour taste. Stirring constantly. until all the cheese is melted.

Pour over macaroni which has been placed in a greased 2 qt. casserole.
Top with 1/4 to 1/2 cup coarse bread or cracker crumbs combined with 2 tbsp melted butter or margarine.(I add a little grated cheese to these also).

P.S. old cheese here in Canada is the same as sharp in the U.S.

Nancy, Ditto and Little One (I still like the name "Little One" as that is what this kitten has been known as since coming to Nancy's home). On the 19th of December I sent in a request to Mary Alyce (misspelled in that post) in WI asking if she would post her recipe for creamed
cucumbers which she mentioned as part of a Christmas picnic dinner that her family had enjoyed. I have not seen the recipe posted nor a reply to my request, but with the activities and weather in parts of our country during the past several days, my request may have been overlooked. So I'm sending this second request to Mary Alyce in WI asking if she will share her or her family's recipe for the creamed cucumbers.

And I want to thank Doris, S. Indiana for sharing her mother's recipe for deviled eggs. I cannot purchase the Marzetti Coleslaw Dressing locally but thankfully I've purchased it on-line for the past several years - and love it. I'm sure that ingredient is part of what makes your mother's deviled egg recipe special.

This is in response to those who want the CHERRY SALAD recipe. My MIL has this every Thanksgiving and Christmas. We use this instead of Cranberry jelly.

Cherry Salad

1 Can Cherry Pie Filling
1/2 cup water
6 oz box Cherry Jello
1/4 cup sugar
1/2 to 2/3 cup pecans
3/4 cup cola
1 small can crushed undrained pineapple

Mix pie filling, water, sugar and Jell-O together in saucepan and heat on low for 5 minutes until dissolved. Let cool. Add nuts, cola and pineapple. Refrigerate. Can be made the day before to let flavors blend.

Chris and Shortcake’s Mac and Cheese

1 pound macaroni – 2 c. dry
3 Tablespoons butter
2 Tablespoons flour
2 1/2 cups milk
1 egg, slightly beaten
1/2 teaspoon salt
1/4 tsp. pepper
2 tbl. Dijon mustard
1 tsp. Louisiana Hot sauce
1 rsp, garlic powder
1 pkg. beef hot dogs, cut in fifths and browned
3/4 c. Mexican mixed shredded cheese
3/4 c. Co-Jack shredded cheese

Cook macaroni in large quantity of boiling water until done but still firm. Drain, rinse with cold water and drain again. Melt butter in saucepan. When bubbly add flour, stir until well blended. Slowly add milk. Cook, stirring frequently until sauce begins to thicken. Remove from fire, cool slightly, blend in egg, salt, pepper, mustard, hot sauce & garlic powder. Add browned hot dog pieces and stir till incorporated. Spoon into 9 x 13 baking dish. Combine bread crumbs, butter and parsley and sprinkle over mac & cheese. Cover with foil. Bake at 350ºF for 45 minutes or until thoroughly hot.

"Recently we moved to Deming, New Mexico and love it so much. Today we had are 2nd snowfall and we are located 14 miles from Mexico. Everyone tells us this is very rare. Had lived in Florida, Alabama and Mississippi when I sent or requested recipes before this time. We had a wonderful soup called potato with green chilies at a restaurant on our way here and it was so good. If anyone has a recipe for this I would sure love to have it." Marti now in NM, you could have had a couple of different soups/stews with the 2 ingredients you mentioned. However one comes to mind, and it is so very good! TNT

Mendoza's Green Chili Stew

1 lg. (28 oz.) canned, cooked pork, shredded*
1 lg. onion cubed
1 lg. Tbl. minced garlic - overflow
1 lg. (28 oz.) can green chiles, seeded and cut in 1" squares
5 to 6 med. to lg. potatoes, peeled and cubed
1 tsp. green salsa (the hotter the better!)
water

Saute chiles, onion and garlic in 1 Tbl. oil in 5 qt. Dutch oven till crisp/tender. Drain off oil. Add all other ingredients, except potatoes. Simmer 1 hr. or so slowly. Add potatoes and simmer till potatoes are cooked and the flavors are blended. You can also do all the simmering in a crock pot after the browning.

*You can use 1 - 2 lbs. pork steaks, pork chops or pork loin cut in 1" cubes and browned first in 2 Tbl. oil. You may also use browned ground beef with this too. Either is very good! posted under Southwestern on Nancy's message board.

Sue, When you follow the directions to make a boxed cake, mix it in a very large - 8 c. - measuring bowl and you will know how much to put in each bowl. Or just eyeball it and pour 1/2 in one and 1/2 in the other. Works every time!

For Sue asking about measuring cake batter - pour the batter into measuring cups and put a cup in one pan, then a cup in the 2nd pan, and repeat until all batter is used. Good Luck.

M & M Meringues

2 egg whites
Pinch cream of tartar
1/2 cup sugar
3/4 cup M&M's

In a small, deep bowl, beat egg whites with cream of tartar until foamy. Gradually beat in sugar until a stiff meringue is formed. Fold in candy. Grease and flour large cookie sheets. Drop cookies by teaspoonfuls onto cookie sheets. Garnish each with more candy. Bake at 250 degrees 30 minutes or until cookies are firm to the touch but still white. Cool cookies on cookie sheets. Remove from sheet with spatula. These cookies store well in a container with a tight cover.

Shrimp And Pineapple

1 oz Grand Marnier
1 cup Thousand Island dressing
Half a fresh pineapple
1 lb cooked shrimp

Combine Grand Marnier and Thousand Island dressing. Cut a fresh pineapple in half and scoop out pineapple chunks with a grapefruit knife. Fill scooped out pineapple with pineapple chunks and shrimp. Pour sauce over the pineapple chunks and shrimp. Place pineapple on a platter and serve with toothpicks. Serves 4-6 guests.

I need help cooking a Strip Steak, like you would cook a T-Bone Steak in the oven Plus a good T & T marinade sauce not a BBQ Sauce.

Any & all help certainly be appreciated.

In the December 23 newsletter Emily mentioned Porcupine meatballs cooked in the pressure cooker. She did not remember who requested a recipe and neither do I. This recipe was in the booklet that came with my Presto Pressure cooker. I have made it many times and they are very good. They are a little dense so do not
pack them tightly when forming into balls.

Pressure Cooker Porcupine Meatballs

1 1/2 lbs. ground beef
1/2 cup uncooked rice, not instant
1 tsp salt
1 Tbsp. minced onion -or more to your taste
1 can condensed tomato soup
1/2-1 cup water

Combine meat, rice ,salt and onion. Shape into small balls. Heat tomato soup and water in the pressure cooker. Drop meat balls into the soup mixture. Close cover securely. Place regulator on the vent pipe and cook 10 minutes at 15 lbs. pressure. Let pressure drop of its own accord.
Serves 5-6

This is in response to Boots in VA regarding her Club Aluminum Dutch oven. If you are active on ebay, you will certainly find one there. I would have no idea what is equivalent to Club Aluminum. My Mother had a set and gave me a set, and I do have a Dutch oven. I would be more than happy to sell Boots my turquoise Dutch, oven, if she doesn't mind paying a little for it and for the shipping. I can find a replacement in Goodwill, it just takes time as they are harder to come by nowadays. Nancy, feel free to send Boots my email address if she is interested.

NancyV in Fla one of the best ways to follow a low carb diet is to eliminate "white" from your diet. Things like sugar, flour, potatoes, pasta, and rice are high in carbs. It's hard to get used to doing without the bread and potatoes, along with all those baked desserts, but after awhile your craving for them passes and you are satisfied with just meats and vegetables, Leave the croutons out of the salad and eat your meat "au jus" and forgo the gravy.

This is a good thick shrimp bisque .

Shrimp Corn Bisque Recipe

2 lbs. frozen peeled &cooked shrimp
2 cans cream potato soup
1 can cream chicken soup
2 cans cream corn
1 small 1/2 & 1/2 cream
8 oz. cream cheese (soften)
1 bag season blend
1 stick margarine
1 dash crab boil & Tony's Chachere's seasoning

Saute shrimp & season blend in margarine. Mix all other ingredients together in crock pot.
Add Shrimp & season blend. cook on low for 2 hours.
