This is for Sondra in Ca who asked for
recipes for cookies using either Rice
Crispies or corn flakes. These are an
old favorite in my family.
Margo/Boston
Ranger Cookies
1/2 cup melted butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 cup quick rolled oats (not instant)
1 cup Rice Crispies or crushed corn
flakes
1/2 cup shredded coconut
1/2 cup chopped nuts
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1 cup sifted flour.
Combine melted butter, sugars, egg, and
vanilla. Beat until blended and creamy.
Add remaining ingredients, sifting flour
with salt, baking powder, and baking
soda. Mix to a stiff dough. Pinch off
pieces and shape into balls. Place on
greased cookie sheet or parchment
covered cookie sheets and press flat
with a fork. Bake for 10 minutes at 375
degrees in a 375 degree preheated oven.
